Recipe of Desi Pulao [North Indian Tehri]

  Recipe of Desi Pulao [North Indian Tehri]


Ingredients:

  • 2 cups basmati rice, properly washed
  • Minimum 400ml water
  • 2 medium size potato finely chopped, 50 grams pealed peas
  •  2 medium size onions finely chopped, 2 medium size tomato finely chopped
  • 2 green chilies finely chopped
  • 4-5 pieces of black pepper, 1/4 teaspoon cumin [Jeera], 4-5 pieces of chopped garlic,  2 pieces of bayleaf [Tej patta], few coriander leaves
  • 1/4 teaspoon turmeric powder [Haldi powder], 1/4 teaspoon red chili powder, 1/2 teaspoon coriander powder, 1/3 teaspoon garam masala
  • Mustard oil or Refined oil
  • Salt as per taste
Procedure:

  • Heat the oil in a cooker.
  • Then add chopped garlic, onions, cumin, black pepper, bayleaf [Tej patta].
  • Cook them for 35-40 seconds.
  • Then add turmeric powder, red chili powder, coriander powder, garam masala powder.
  • Then add potato, tomato and green chili.
  • Cook them for 2-3 minutes.
  • Then add rice to it and mix properly.
  • Add water and salt.
  • Close the cooker and wait for 1 whistle.
  • As the gas is released open the cooker, add coriander leaves.

Serve it with Raita, pickle and green chatni.

Recipe of Paneer Bhurjee

Ingredients:

  • 250 grams paneer 
  • 2 onions medium size finely chopped 
  • 1 big size tomato finely chopped
  • 2 green chilies finely chopped
  • 1/4 teaspoon turmeric powder [Haldi powder]
  • 1/4 teaspoon garam masala powder
  • 1/4 teaspoon red chili powder
  • 1/3 teaspoon cumin seeds [Jeera]
  • 2 tablespoon oil
  • Salt as per taste
  • Few coriander leaves [Dhania Patti]

Procedure:
  1. Crumble the paneer and keep it aside.
  2. Then first heat the oil in a kadhai for 5 minutes and then add cumin seeds [Jeera] to it.
  3. When they get browned then add chopped onions to it, when they become translucent then add chopped green chilies.
  4. Cook it for some time.
  5. Then add tomatoes till they become soft and salt as per your taste.
  6. Now add turmeric [Haldi], red chili powder, garam masala powder and stir them.
  7. Then add the crumbled paneer and cook it for 2-3 minutes.
  8. Add the coriander leaves to it and mix it.
  9. Now your tasty paneer bhurjee is ready. Serve it with chapati or paratha.

Recipe of Chatpate Dahi Aaloo

Ingredients required:

  • 3-5 boiled potatoes[Aaloo], mashed
  • 2 tablespoon oil
  • 250 grams curd [Dahi]
  • 1/2 teaspoon cumin [jeera]
  • 1/2 teaspoon Banarasi Rye
  • 200 ml boiled water
  • 2 teaspoon vegetable spice [Sabji Masala]
  • 1/4 teaspoon turmeric powder [Haldi]
  • 1 pinch asafoetida [Hing]
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon coriander powder [Dhania Powder]
  • 6-7 curry leaves [Kadhi patta]
  • Salt according to your taste
Procedure:

  • Heat the oil in a frying pan. Then add curry leaves, cumin, Banarasi rye, asafoetida let them cook for 5-6 seconds and then add turmeric powder, red chili powder coriander powder, vegetable spice and let it cook for 1 minute. 
  • After that add mashed potatoes to it, fry it for 1 minute.
  • Then add 200 ml boiled water.
  • Cook it for 2-3 minutes. Then add salt and curd and then cook it for 5-6 minutes.
  • Decorate it with some coriander leaves.
  • Now your Dahi Aaloo is ready, serve it with Chapati and rice.  

Quick Recipe of Bhindi [ladyfinger]

Bhindi Ki Sabzi


Ingredients Required:

  • 250 grams bhindi [ladyfinger]
  • 2 medium onion, finely cut in pieces
  • 4-5 pieces of garlic, cut in slices
  • 2 green chili, cut in small pieces
  • 1/2 teaspoon red chili powder 
  • 1/4 teaspoon turmeric powder [Haldi]
  • 1/4 teaspoon Garam masala powder
  • A pinch of asafoetida [Heeng] 
  • Salt according to your taste
  • 3 tablespoon oil
Procedure:


  • Rinse and dry the bhindi.
  • Then cut it in round shape or cut it vertically into two or three pieces.
  • Heat oil in a frying pan, and then add garlic and asafoetida into it.
  • Fry it for 15-20 seconds.
  • Then add sliced onions, stir them till they become glassy. Add turmeic powder, green chilies and stir.
  • Add the bhindi and salt and stir.
  • After that cover the pan and cook the bhindi for 4-5 minutes.
  • After that remove the lid and add red chili powder, garam masala. Stir well.
  • Now cook it till the oil starts separating and bhindi has cooked.
  • Stir for sometime while the bhindi is cooking.
  • Now, your bhindi is ready serve it with chapati.

Recipe of Meetha Cheela

Material Required :

  • Sugar
  • Wheat Flour
  • Water
  • Oil  or Melted butter (ghee)
Procedure

  1. First mix the flour with water in a bowl, make average thin paste.
  2. Then add sugar in the paste.
  3. Turn on the gas stove and keep a frying pan over it and wait 2 minutes.
  4. Pour some oil or melted butter on the pan.
  5. Pour the paste on it and when the color of the paste becomes a little darker then try to pull it and turn it to another side.
  6. Again add some oil or melted butter to the half made cheela so that it doesn't sticks to the pan.
  7. Then press it with a spoon to its every side and turn it to other side.
  8. Now your Meetha Cheela is ready. 
  9. Serve it with Green Chatni and Pickle.
